Celebrate Summer with Sustainable Sushi at The Vineyard
So, we were sitting in the kitchen planning our new Splash menu and we were thinking… Summer… Sushi… Mmm… We’ve been serving sustainable fish for years. We’ve won awards for our focus. And with some of the best fish in the world swimming in the waters around Cape Town, why would we serve anything else? We rolled a bit of this, we tried a bit of that and – taDA! – local, sustainably produced sushi! The perfect sushi for a Cape Town summer!
Yip, from the maki rolls, nigiri and sashimi to the fashion sandwiches, California rolls and hand rolls, all made with local, ethically sourced ingredients: local pole-caught tuna, sea trout farmed in natural bays along the West Coast, Abalobi fish from self-sustaining fishing communities using traditional fishing methods, and abalone/perlemoen that is locally farmed and purchased under license.
Avos are bought locally and won’t be available if they are completely out of season. Even the sides are locally sourced: ginger is bought from a farmer in the area, then freshly picked and prepared on-site, wasabi is mimicked by mixing local horseradish with turnip.
While less salty, white soy sauce is offered on the tables, Tamari gluten-free soy is also available. Sweet chilli sauce is prepared by the Splash team from local hot peppers and the mayo is also house-made. Yuzu and jalapeno dressing is available on request.
