It has a ruby colour and is complex on the nose with aromas of undergrowth and raspberry. Ample in the mouth, notes of cassis, liquorice and mocha are released. Smooth tannins and a beautiful freshness on the finish.
Pinot Noir is a black grape variety associated with some of the world’s most expensive wines. The name, derived from the French words meaning ‘pine’ and ‘black’, refers to the compact conical shape of the grape bunches that resemble a pine cone and the dark colour of the berries. It is believed that Pinot Noir is one of the oldest clones of the Pinot Family. It has been cultivated in Burgundy France since the first century by the Cistercian monks.
The overall taste of Pinot Noir is influenced by various variables, including the area of production, the micro and macro climatic conditions, the way in which the vines were managed and the wine production process. A young Pinot Noir may taste of red fruits, such as raspberries, plums, cranberries and cherries. As the wine ages it often develops more earthy notes, with hints of truffles, wild mushrooms, cured meat and exotic spices.
